Weight Loss Recipe: Baked Halibut With Lime Mango Salsa

Complimented with a beautiful palate of salsa veggies, this fish dish is packed with protein, omega 3 acids, vitamin C, fiber and anti-oxidants. It’s the perfect meal to satisfy you without making you feel heavy afterwards. Pair with a tossed salad or Asparagus in Kale Parmesan Pesto.

Ingredients:

4 6-ounce halibut fillets 3 Tbsp extra-virgin olive oil, divided (plus more for brushing) 3 Tbsp fresh lime juice, divided 2 cloves garlic, minced 1 avocado, diced 1 mango, diced 1 cup cherry tomatoes, quartered 2 sprigs of fresh basil leaves, sliced thinly Sea salt and cracked black pepper, to taste Lime wedges

Directions:

  1. Preheat the oven to 400 degrees F. Place fish fillets in a large glass baking dish, skin side down. Drizzle fillets with 2 Tbsp of the olive oil and 2 Tbsp of the lime juice, and season with freshly minced garlic, salt and pepper. Allow the fish to marinate at room temperature for about 10 minutes.
  2. Meanwhile, in a large bowl, combine the diced mango, tomatoes, avocado, 1 Tbsp olive oil, 1 Tbsp lime juice and basil. Season with salt and pepper and toss very gently (so as not to mash the avocado) to combine.
  3. Place the fish dish in the oven and bake for about 12 – 15 minutes, until the halibut flakes easily when tested with a fork.
  4. Transfer the fish to a serving plate. Spoon mango salsa over each halibut fillet, and splash with a squeezed lime wedge.
