Inject a Caribbean flavor into mealtime with this colorful, mouth-watering dish. Complimented with a beautiful palate of salsa veggies, this fish dish is packed with protein, omega 3 acids, vitamin C, fiber and anti-oxidants. 4 6-ounce halibut fillets 3 Tbsp extra-virgin olive oil, divided (plus more for brushing) 3 Tbsp fresh lime juice, divided 2 cloves garlic, minced 1 avocado, diced 1 mango, diced 1 cup cherry tomatoes, quartered 2 sprigs of fresh basil leaves, sliced thinly Sea salt and cracked black pepper, to taste Lime wedges
- Preheat the oven to 400 degrees F. Place fish fillets in a large glass baking dish, skin side down. Drizzle fillets with 2 Tbsp of the olive oil and 2 Tbsp of the lime juice, and season with freshly minced garlic, salt and pepper. Allow the fish to marinate at room temperature for about 10 minutes.
- Meanwhile, in a large bowl, combine the diced mango, tomatoes, avocado, 1 Tbsp olive oil, 1 Tbsp lime juice and basil. Season with salt and pepper and toss very gently (so as not to mash the avocado) to combine.
- Place the fish dish in the oven and bake for about 12 – 15 minutes, until the halibut flakes easily when tested with a fork.
- Transfer the fish to a serving plate. Spoon mango salsa over each halibut fillet, and splash with a squeezed lime wedge.
