
It’s always nice to get something for free. Sugar free, fat free and gluten free. These oatmeal cookies are so easy to whip up in a pinch, and use just a handful of common ingredients you likely already have in your kitchen. They are a perfect, old fashioned wholesome treat for the kids (adult kids included). When they’ve been earned, that is – with lots of happy good-health behavior.
Fat-Free Sugar-Free Oatmeal Raisin Cookies
3 ripe bananas
1/3 cup unsweetened applesauce
2 cups rolled oats (if making gluten-free, use GF certified oats)
1/4 cup unsweetened almond milk
1/2 cup raisins
1 tsp pure vanilla extract
1 tsp cinnamon
¼ cup cocoa nibs or sugar-free dark chocolate chips
Preheat the oven to 350 F. Line a baking sheet with parchment paper. Place the bananas, applesauce, almond milk, vanilla and cinnamon in a food processor and blend. Add in the oats and process again, until the oats combine well but the dough remains chunky. Using a spoon, scoop small balls of cookie dough onto the lined baking sheet, leaving room between each cookie. Press in a few raisins and chips into each cookie. Place in the oven and bake for 15-20 minutes. Remove from the oven and allow them to cool and firm up.
