Maple-Glazed Grilled Chicken Breast
2 boneless, skinless chicken breasts
2 Tbsp 100% pure maple syrup
1 Tbsp tamari or soy sauce
2 tsp freshly squeezed lemon juice
2 cloves garlic, minced
1 tsp ginger root, minced
½ tsp cracked black pepper
½ tsp red chili flakes
In a small bowl, whisk together the maple syrup, tamari, lemon juice, garlic, ginger, chili flakes and black pepper. Place the chicken into a glass bowl or glass baking dish, pour the marinade over top and turn the chicken breasts over to coat both sides. Cover and refrigerate for 2 hours.
Coat the grill with cooking spray and heat it up. Remove the chicken from the marinade (reserve the left over marinade) and grill on the BBQ until an inserted meat thermometer reads 165 degrees F (about 3 to 5 minutes each side). Place the chicken on a serving plate.
Meanwhile, pour the reserved marinade into a sauce pan and bring it to a simmer until it’s reduced by about half, for about 4 minutes. Spoon the thickened sauce over the cooked chicken breasts.
