Kale & Ancient Grains Buddha Bowl with Green Goddess Dressing
½ cup cooked amaranth, quinoa or wild rice (cooked according to package instructions)
½ cup frozen green peas
½ cup frozen edamame, shells removed
1 cup broccoli florets
1 cup Brussel sprouts, chopped thinly
½ cup alfalfa sprouts
1 cup kale, chopped into ribbons
1 handful of fresh cilantro, chopped
1 Tbsp hemp seeds
Green Goddess Dressing:
¼ ripe avocado
¼ cup fresh cilantro
1 clove garlic
1 or 2 jalapeno, ribs and seeds removed
2 Tbsp lime juice
1 Tbsp water
¼ tsp sea salt
1 Tbsp shelled pistachios
Cook the grains according to package instructions.
Meanwhile, boil water in a sauce pan. Place the frozen edamame, peas and broccoli in a steamer basket, and place the basket on top of the boiling pot of water (ensuring that the hot water doesn’t touch the veggies) and cover. Steam for 5 to 7 minutes, or until the veggies are tender.
Meanwhile, in a powerful food processor, place all of the salad dressing ingredients inside and process until the dressing is smooth and creamy. (Add a bit more water to it if you prefer your salad dressing more runny).
In a bowl, toss together the cooked quinoa, steamed broccoli, peas and edamame, and the kale, sprouts, green onion and cilantro. Drizzle with two tablespoons of green goddess dressing and sprinkle with hemp seeds.
