Healthy Chocolate Chip Cookie Dough
250g drained garbanzo beans
¼ cup natural unsalted cashew butter
1 ¼ cups dried figs, soaked overnight and drained
2 Tbsp flax seeds
3 Tbsp unsweetened almond milk
2 tsp pure vanilla extract
1/8 tsp baking soda
1/8 tsp salt
1/4 cup cacao nibs or sugar-free chocolate chips (optional)
In a powerful food processor, process all of the ingredients together (except for the chocolate chips). Process well, until the texture resembles real cookie dough. Then stir in the chocolate chips.
