Chipotle Mango Fish Tacos in Lettuce Wraps

These aren’t your typical beer-battered fish sticks smothered in sour cream and wrapped in flour tortillas. Nor are they your typical battered fish stick smothered in sour cream and wrapped in flour tortillas that have had some fat and carbs removed from them for good measure.

These are waaay more fun, spicy, saucy and sassy. And have had a lot more fat and carbs removed. That’s a fried fish taco fiesta worth attending, wouldn’t you say? Try these paleo-friendly fish tacos and see how they measure up.

Fish:

1 lb fresh cod, bones and skin removed, cut into 1 inch wide chunks

1 Tbsp extra-virgin olive oil

¼ cup lime juice

1 tsp cumin

1 tsp coriander

1 tsp garlic powder

1 tsp dried oregano

1 tsp chili powder

2 tsp chipotle powdermango-cut-up

1 tsp salt

Spicy Avocado Crema:

1 ripe avocado

1 cup warm water

¼ cup lime juice

2 (or more) jalapeno peppers, chopped

1 tsp chipotle powder

½ tsp salt

Toppings:

1 tomato, cut into small cubes

1 mango, cut into small cubes

1 jalapeno, seeds removed, chopped finely

¼ red onion, chopped finely

2 cloves garlic, minced

1 Tbsp fresh cilantro, coarsely chopped

1 cup shredded purple cabbage

Taco Wraps:

Lettuce cups, washed

Lime wedges, for garnish

Whisk together the olive oil, lime juice, cumin, coriander, garlic powder, oregano, chili powder, chipotle powder and salt, and marinate the fish in this mixture overnight in the refrigerator.

Preheat the oven to 375 degrees F. Line a flat baking sheet with parchment paper. Spread the marinated fish pieces out on the tray and bake for 5 minutes. Flip each fish piece over and bake for 5 more minutes.

While the fish is baking, place all of the ingredients for the avocado crema into a blender or food processor, and blend until smooth and creamy. In a separate bowl, toss together all of the toppings well, allowing them to rest together for several minutes so that the flavors infuse.

Assemble the fish tacos by placing three or four fish pieces into a lettuce cup, spooning over with toppings and drizzling with some avocado crema.

Serves 6.
