This fragrant and flavorful dish is high in plant protein and takes about 10 minutes to throw together. Green beans are a fat-free source of iron and fiber, and the addition of almonds and sesame injects this dish with a good dose of cholesterol-lowering omega 3 acids as well as a pleasing crunch.
1 cup green beans, trimmed
1 tbsp sesame oil
1 tbsp fresh ginger, minced
1 clove garlic, minced
1 tsp sesame seeds
1 tbsp slivered almonds
- In a steamer basket, steam the green beans until bright green and tender, about 3 – 5 minutes.
- Heat a wok or skillet on medium-high heat. Add the sesame oil, allow it to get hot (about 2 minutes), than sauté the ginger and garlic for about 1 minutes, until fragrant. Stir in the beans, cook for about 30 seconds, until heated through. Place the green beans, ginger and garlic onto a serving plate, and sprinkle with sesame seeds and almonds.
