Strawberries ‘n Cream Chia Pudding

Ditch the dairy, refined sugar, gelatin and gluten in this easy, vegan, no-bake dessert recipe that takes just a few minutes to whip up from scratch.

The unique ingredient in this light and luscious dessert is chia, tiny seeds that are making a big name for themselves in the health and weight loss world these days. For starters, these small super-seeds have major filling power. Full of fiber, they expand in liquid, turning into a gut-friendly gel that makes you feel full for a long period of time while improving your digestion. Chia seeds also pack an impressively large number of nutrients into a very small number of calories – 1 ounce of chia seeds contains 11 grams of fiber, 4 grams of protein, 5 grams of heart-healthy omega 3, as well as calcium, manganese, magnesium, phosphorous and zinc, all for only 137 calories (and even less calories if you subtract the fiber calories that your body doesn’t absorb).

This creamy treat also uses coconut milk in place of dairy-based creams. Studies have shown that the medium-chained fatty acids found in coconut milk help to support health and weight loss, as they are burned more readily for energy, help to stabilize blood sugar and help to decrease hunger and appetite.

Strawberries ‘n Cream Chia Pudding

1 cups strawberries, green tops removed

¾ cup coconut milk

1 Tbsp pure vanilla extract

2 Tbsp pure maple syrup or agave nectar

½ tsp grated lime zest

¼ cup chia seeds

Optional toppings: sliced strawberries, coconut flakes, cocoa nibs, chopped nuts, etc.

In a blender, combine the strawberries, coconut milk, vanilla, sweetener and lime zest, blending until smooth. Pour mixture into a large bowl and whisk in the chia seeds very well. Allow to rest on the counter for 5 minutes. Cover and refrigerate for at least 4 hours, stirring once more before serving.
