If you’re Irish, prepare to be seriously offended. It’s not that a lucky parade of corned beef, soda bread and potatoes washed down with green beer doesn’t make for a marvelous time. It’s that it makes for an unwelcomed corned beef-soda bread-potatoes-green beer belly afterwards.
Here’s a fantastically delicious, low-fat and low-carb compromise that will allow you to enjoy some traditional festive fare like colcannon this St. Patrick’s Day, but won’t make you stout afterwards. Cauliflower makes for a surprisingly tasty and creamy substitute for mashed potatoes, with far less starch and carbs and far more fiber and antioxidants.
And with the addition of detoxifying kale – it’s green too!

Low-Carb Cauliflower Colcannon
Ingredients
2 cups cauliflower
2 handfuls kale, washed
3 cloves garlic, minced
2 teaspoon olive oil or coconut oil
½ teaspoon sea salt
Method
- Place the cauliflower and garlic into a steamer basket. Lay the kale leaves on top. Steam the vegetables for about 8 minutes.
- Remove the steamer basket from the heat, and remove the kale leaves to a separate plate. Once the cauliflower has cooled a bit, place the cauliflower, garlic, oil and salt into a food processor and blend until the mixture is creamy and smooth.
- Tear up the kale leaves and throw them into the food processor, pulsing them in until they are roughly chopped up and evenly distributed throughout the colcannon.
- Serve and enjoy!
