Skinny Chocolate Mousse

Wait…but…is “skinny” and “chocolate mousse” legally even allowed to appear side-by-side in the same sentence, you wonder?

It is when describing this sumptuously low-fat, low-glycemic and high-protein dessert.

How does this café-worthy classic confection merit such a healthy description? By abandoning traditional ingredients like refined sugar, cholesterol-laden yolks and fatty creams, achieving the same swoon-worthy, silky sweet decadence with ingredients like high-fiber dates, soft tofu and Greek yogurt instead.

The best part is what you get for those 5 grinding minutes of very good blender behavior – a light, fluffy chocolate mousse that your mouth won’t soon forget. Even though your waistline will.

High-Protein Low-Carb Skinny Chocolate Moussechocolate mousse

12 ounces soft silken tofu, drained

½ cup low-fat plain Greek yogurt

1 cup pitted dates, soaked overnight and drained

1/3 cup unsweetened cocoa powder

2 tsp pure vanilla extract

1/8 tsp pure almond extract

3 pinches salt

Place the tofu, dates, vanilla and almond extract into a powerful food processer and blend until smooth. Add in the cocoa powder and salt and continue to process until smooth and evenly blended. Pour the mixture into a large bowl.

Fold in the yogurt until uniformly blended. Chill in the refrigerator until ready to serve.
