Pear, Pomegranate & Pecan Salad on Lush Bitter Greens
in an Orange-Tarragon Vinaigrette
1 cup dandelion greens, torn
1 cup chicory leaves, outer ribs discarded, leaves torn
1 cup baby arugula
1 small fennel bulb, thinly sliced
¼ cup celery, thinly sliced
1 shallot, chopped
¼ cup fresh parsley, chopped
¼ cup pomegranate seeds
1 Bosc, Anjou or Bartlett pear, cored and seeds removed, thinly sliced
¼ cup pecan halves
¼ cup extra-virgin olive oil
¼ cup fresh squeezed orange juice
¼ cup white wine vinegar or apple-cider vinegar
1 Tbsp whole grain Dijon mustard
2 Tbsp freshly chopped tarragon, or 2 tsp dried tarragon
1 clove garlic, crushed
Salt & cracked black pepper, to taste
Pinch of cayenne pepper (optional)
In a small bowl, whisk together all of the salad dressing ingredients and leave it to rest and infuse on the counter for several minutes.
In a large bowl, toss together all of the greens. Top with the pear, pomegranate and pecans. Drizzle over with the vinaigrette and toss to coat everything well. Serve and enjoy.
