Pomegranate Pear & Pecan Salad on Detoxifying Bitter Greens

This salad is loaded with flavorful bitter greens that are naturally detoxifying, nutrient-packed, fiber-filled and that quickly fill you up on very few calories. It manages to stimulate and satisfy every part of your taste palate, with the pleasant sourness of pomegranate and orange balanced by the bitterness of dandelion, chicory, arugula and endive greens, complimented with the natural sweetness of pear and pecans.

This salad makes for an excellent starter to any meal, or can easily be rounded out as a satisfying lunch entrée by tossing in some avocado, cubed goat cheese or grilled chicken strips.

Pear, Pomegranate & Pecan Salad on Lush Bitter Greens

in an Orange-Tarragon Vinaigrette


1 cup dandelion greens, torn

1 cup chicory leaves, outer ribs discarded, leaves torn

1 cup baby arugula

1 medium Belgian endive, thinly slicedarugula

1 small fennel bulb, thinly sliced

¼ cup celery, thinly sliced

1 shallot, chopped

¼ cup fresh parsley, chopped

¼ cup pomegranate seeds

1 Bosc, Anjou or Bartlett pear, cored and seeds removed, thinly sliced

¼ cup pecan halves


Orange-Tarragon Vinaigrette:

¼ cup extra-virgin olive oil

¼ cup fresh squeezed orange juice

¼ cup white wine vinegar or apple-cider vinegar

1 Tbsp whole grain Dijon mustard

2 Tbsp freshly chopped tarragon, or 2 tsp dried tarragon

1 clove garlic, crushed

Salt & cracked black pepper, to taste

Pinch of cayenne pepper (optional)

In a small bowl, whisk together all of the salad dressing ingredients and leave it to rest and infuse on the counter for several minutes.

In a large bowl, toss together all of the greens. Top with the pear, pomegranate and pecans. Drizzle over with the vinaigrette and toss to coat everything well. Serve and enjoy.
