Parmesan Zoodles in Spicy Sun-Dried Tomato Sauce

The sun dried tomatoes and garlic really deepen the flavors of this earthy sauce, while sautéed jalapeno and chili flakes add an exciting kick of heat.

2 Tbsp extra virgin olive oil

1 purple onion, chopped

4 garlic cloves, minced

1 red bell pepper, chopped

½ cup sundried tomatoes

½ tsp salt

½ tsp black pepper

1 jalapeno, seeds removed, finely chopped

2 cups cherry tomatoes, halved

1 cup tomato sauce

1 tsp red chili flakes, or to taste

2 zucchini, spiralized

1 handful fresh basil, torn

1 handful fresh oregano, torn

1 Tbsp grated parmesan

Heat olive oil in a sauce pan. Add onions and sauté until translucent, about 3 minutes. Add in red bell pepper and jalapeno and sauté until soft, about 3 minutes. Add in sundried tomatoes and sauté for 2 minutes. Add in garlic and sauté until fragrant, about 30 seconds. Stir in salt, black pepper and chili flakes, then add in cherry tomatoes and sauté until soft and begin to break down, about 3 minutes. Pour in tomato sauce, cover the sauce pan and simmer for about 20 minutes.

While the sauce simmers, spiralize the zucchinis into zoodles (if you don’t have a spiralizer, than julienne them thinly).

When the sauce is finished simmering, stir in the fresh basil and oregano, adjust seasonings, and then stir in the zoodles. Remove the pot from the heat, spoon into serving bowls and sprinkle with some parmesan.
