High-Protein Low-Fat Vegetarian Chickpea Burgers Recipe

You may have stored away your outdoor grill for the season’s end, but that doesn’t mean that you have to say goodbye to mouth-watering burgers in the meantime.

These vegetarian, low-fat and low-cholesterol burgers warm up your taste buds with Middle-eastern herbs and spices. Serve them beside Lebanese tabbouleh or Israeli salad, and you can create an entire international culinary experience in just the few quick and easy minutes that it takes to throw together this unique and eye-catching weight loss dinner.

Middle-Eastern Chickpea Patties

1 ½ cups cooked chickpeas (if using canned, rinse and drain them)

½ cup rolled oats

1 onion, diced

1 carrot, sliced

2 cloves garlic

½ cup fresh parsley leaves

2 Tbsp olive oil

½ tsp salt

¼ tsp coriander

¼ tsp cumin

Preheat oven to 400 F.

In a skillet, heat 1 tablespoon olive oil and sautée onions over medium heat until translucent, about 5 minutes. Then remove from heat.

Meanwhile, in a food processor, process the chickpeas, carrots, garlic and parsley until smooth. Scrape the chickpea mixture into a clean bowl and stir in the sautéed onions, rolled oats, salt, cumin and coriander, mixing well until well combined.

Lightly grease a baking sheet. Form the chickpea mixture into about 4 patties, and place them on the sheet. Brush both sides of each patty with the remaining 1 Tbsp of olive oil. Bake in the oven for about 15 – 20 minutes, or until lightly golden brown.
