Fried Egg with Mediterranean Roasted Broccoli & Cherry Tomatoes

1 cup broccoli florets

½ cup cherry tomatoes

1 Tbsp olive oil, divided

4 cloves garlic, whole

1 tsp oregano

Pinch cayenne pepper (optional)

Salt and black pepper, to taste

1 organic egg

Preheat oven to 400 degree. In a bowl, place the broccoli, tomatoes and garlic cloves. Drizzle on the oil, oregano, salt and pepper, and then toss it all with clean hands to evenly coat all of the vegetables. Spread the veggies in a single layer on a baking sheet, and place it in the oven for about 10 minutes, until the broccoli starts to brown. Meanwhile, heat olive oil in a skillet. Crack in the egg, season with salt, pepper and cayenne pepper, and fry to desired doneness. Slice the egg onto a plate beside the roasted veggies and serve.
