Colorful, crisp and crunchy, dishes featuring low-cal and low-cost cabbage can be prepared in a large variety of ways and flavors, making this cruciferous vegetable one of the easiest and cheapest ways to seriously boost up the health and weight loss power of your weekly meal plan.

 

Sweet & Spicy Confetti Slaw

1 cup green cabbage, thinly sliced

1 cup red cabbage, thinly sliced

½ cup carrots, shredded

½ cup raw bean sproutscoleslaw

2 green onions, thinly sliced

1 handful fresh cilantro, chopped

1 cup shelled edamame, steamed

1 Tbsp sesame seeds

For the dressing:

¼ cup sesame oil

¼ cup lime juice

¼ cup rice vinegar

¼ cup soy sauce or tamari

2 Tbsp raw honey

2 garlic cloves, minced

1 inch fresh ginger, minced

1 red hot chili pepper minced or 1 tsp dried red chili flakes (optional)

Combine all salad dressing ingredients in a mason jar, cap the jar and give it a shake. Then leave the dressing to infuse on the countertop for 10 minutes.

Meanwhile, wash and chop all veggies, and steam the edamame in a steamer basket or steamer pot. Place all vegetables in a large salad bowl and toss with the salad dressing. Sprinkle with sesame seeds.

Turkey Meatball Soup

500g lean ground turkey

1 egg, beaten

¾ cup uncooked white quinoa or brown rice

1 onion, minced

1 clove garlic, minced

4 cups cabbage, shredded

¼ cup fresh parsley, chopped

1 can (28oz) diced tomatoes

2 Tbsp olive oil

8 cups chicken broth

Salt & black pepper

In a large bowl, mix the ground turkey, egg, quinoa, onion, garlic, salt and pepper. Using clean hands, form into small meat balls.

In a dutch oven, heat some oil over medium heat. Brown the meat balls on all sides. Then pour in the tomatoes (including the juice), chicken broth and cabbage. Bring to a rolling boil, then reduce to a simmer, cooking the soup for about 20 minutes. Stir in the parsley, adjust seasonings and serve.

One-Pan Tofu Cabbage Stir Fry

12 ounces firm tofulady cooking

½ cup vegetable stock

2 Tbsp tamari or soy sauce, divided

½ tsp honey or pure maple syrup

1 Tbsp rice vinegar

2 tsp sesame oil

2 Tbsp peanut oil

1 tsp cornstarch

1 Tbsp fresh ginger, minced

2 garlic cloves, minced

5 cups cabbage, shredded

1 red bell pepper, sliced thinly

¼ cup walnut pieces

Salt & black pepper

1 Tbsp shelled sunflower seeds

1 Tbsp sesame seeds

Place the tofu between two plates and squeeze out all of the excess liquid. Than cut into small cubes.

In a bowl, whisk together 1 Tbsp of soy sauce, the vegetable stock, honey, rice vinegar and the sesame oil. Remove 1 tablespoon of this mixture into a second bowl and whisk the cornstarch into the second bowl. Set these two bowls aside for later.

Heat some peanut oil in a skillet or wok, swishing it around to coat. Add in the tofu and stir fry until golden. Splash over with 1 Tbsp of soy sauce, stir and then remove the tofu to a separate plate.

Add the second tablespoon of peanut oil the skillet, swirl it around to coat the pan, and then add in the garlic and ginger, stir frying for 10 seconds. Add the red pepper, stir fry for 1 minute, then add in the cabbage, walnuts, salt and pepper, and stir fry for another 3 minutes.

Place the tofu back into the skillet with the vegetables and pour in the bowl with the stock sauce, stir frying for 1 minutes. Then pour in the cornstarch mixture and stir around until a glaze forms over the tofu and veggies. Spoon into bowls, sprinkling each bowl with sunflower seeds and sesame seeds. Serve.

Raw Spicy Kimchi

2 lbs (about 14 cups) Nappa cabbage, shredded

2 ½ Tbsp Thai chili paste

2 Tbsp garlic, minced

1 Tbsp fresh ginger, minced

3 Tbsp kosher salt

1 Tbsp toasted sesame seeds

2 tsp sesame oil

Toss cabbage and salt together in a bowl with clean hands, coating the cabbage with the salt. Then place a second bowl on top of the contents of the first bowl and press down, encouraging the cabbage juice to squeeze out. Keep the cabbage weighed down under the bowl for about 3 hours on the counter. Then rinse off the cabbage in a colander, drain off excess fluid and squeeze dry.

In a large mason jar or glass bowl, combine the cabbage, chili paste, sesame seeds, garlic, ginger and sesame oil. Cover and refrigerate at least 4 hours before serving.
