8 Sweet Uses for Strawberries

You can’t have let the entire summer pass you by without at least one foray into a U-Pick strawberry patch, or one indulgent grocery shopping spree on these sweet, seasonal sensations (especially when this is the time of year to buy them at reduced cost!).

But now…what to do with them?

Low on the glycemic index and high in fiber and vitamin C, strawberries are an excellent addition to a low-sugar weight loss eating plan. But these weight loss benefits are null and void if baked into a flaky strawberry pie or a fattening strawberry shortcake.

Try these out-of-this-world delicious recipes that feature gorgeous strawberries as the main event. Sugar-free and low in unhealthy fats, these sweet strawberry treats will give you one more reason to savor these remaining sultry summer days.

Sugar-Free Chocolate Covered Strawberries

½ cup cocoa powder

¼ cup unrefined cold-pressed coconut oil

Liquid stevia drops, to taste

Fresh whole strawberries, washed

Line a cookie sheet with parchment paper. Heat a sauce pan on medium heat, then place coconut oil inside and gently melt down to a liquid. This will happen quickly; immediately turn the heat off. Stir in the cocoa powder and stevia drops, continuing to stir and stir until there are no more lumps of cocoa powder and a thin sauce of even consistency forms. If the sauce thickens, turn the heat back on to low so that it thins out again.

Holding the strawberries by the top, dip each strawberry into the chocolate sauce and place on the prepared baking sheet. Place the baking sheet in the refrigerator to chill, and keep it there until just before serving. Alternatively, if you want the chocolate to harden solid, place the baking sheet into the freezer.

Vegan No-Bake Strawberry “Cheese” Cake

For the crust:

  • ¾ cup pitted dates, soaked overnight and drained
  • ½ cup raw dry almonds
  • ¼ teaspoon pure vanilla extract
  • Pinch salt
  • For the filling:
  • 2 ½ cups raw cashews, soaked overnight and drained
  • ¼ cup unrefined cold-pressed coconut oil
  • 1 tablespoon pure vanilla extract
  • ½ cup raw honey
  • ½ cup lemon juice
  • 2 pinches salt
  • ¼ cup water
  • 5 – 10 strawberries, washed and sliced

To prepare the crust, combine the soaked dates, almonds, vanilla and salt in a food processor. Process until a crumbly, sticky meal forms (add in very small amounts of water if the mixture is too dry). While the crust ingredients are processing, line a round 9-inch spring form pan with parchment paper. Press the crust meal into the pan, covering the bottom and up the sides. Cover with another piece of parchment and store in the freezer while you prepare the cheesecake filling.

To prepare the filling, combine all of the filling ingredients except the strawberries into a food processor. Process until creamy and smooth, stopping occasionally to scrape down the sides of the food processor bowl and push the mixture back towards the center. Pour the mixture into the prepared crust with a spatula. Scatter the strawberry slices around the top and place the strawberry cheesecake in the freezer. Thaw slightly before serving.

Strawberries dipped in Fat-Free Healthy Whipped Cream

Drained-off liquid from 1 (15oz) can of chickpeas or white beans

1/3 cup raw honey

1 teaspoon pure vanilla extract

Fresh whole strawberries, washed well

Open the can of beans and drain out the bean liquid into a mixing bowl. Squeeze out as much bean liquid from the can as you can get, and store the beans for another use (like this Chocolate Chip Cookie Cake)

Combine the honey and vanilla to the bean liquid. Beat the liquid mixture with an electric mixer for 15 – 20 minutes. By the end, the mixture will start to thicken and fluff up into a whipped cream. Serve immediately, with fresh strawberries for dipping. Cover and store left-overs in the refrigerator, beating again to re-thicken the whipped cream before serving.
