5 Healthy Ways to Eat ice Cream

Just because Haagen Daas hasn’t helped your hips much doesn’t mean you have to renounce all things sweet, cold and creamy for good. Allow yourself to indulge in a small bowl of these sweet, sugar-free, slimmer ice-cream swaps this summer, to cool off from the heat and to reward yourself for all the hard work and commitment you’ve been putting into your weight loss program.

Nuts-About-Ice-Cream Ice Cream

 

2 cups raw cashews (or any type of nut you prefer)

Seeds scraped out of 2 vanilla beans (or 2 tablespoons pure vanilla extract)

1 cup pitted dates, soaked overnight and drained

1 cup filtered water

Pinch of salt

Optional Add-Ins: chocolate chips, cocoa powder, ground nuts, coconut shavings, cinnamon, etc.

 

In a powerful food processor, grind the cashews into a fine powder (you can also use a coffee grinder if your food processor can’t handle the job; it’s important that the nuts are ground very finely).

In a food processor, blend together the nut powder, vanilla, dates, water and salt. Blend until the mixture is smooth, even and velvety.

Next, process it in your ice-cream machine according to the manufacturer’s instructions. Then place the churned ice cream in an air-tight container and freeze.

If you don’t have an ice-cream maker, place the mixture directly into an air-tight container into the freezer, stirring the mixture every half hour until it’s frozen.

Allow it to de-frost for a few minutes before you serve.

Island Dream Ice Cream

 

½ cup coconut milk, divided

1 tablespoon plus 1 teaspoon tapioca starch (or instant tapioca that you’ve ground into a fine powder in a coffee grinder)

1 ½ cups fruit juice, vegetable juice, or a combination of juices (freshly squeezed preferred, or store-bought)

Pinch of salt

Optional Add-Ins: chocolate chips, cocoa powder, ground nuts, coconut shavings, cinnamon, nut butter, etc.

 

**For a plain version, replace the fruit juice with ½ cup agave nectar combined with 1 ½ teaspoons pure vanilla extract

 

In a bowl, combine the tapioca starch with ¼ cup of the coconut milk. Set aside.

Heat the remaining coconut milk in a sauce pan on low heat. When it starts to bubble, whisk in the coconut-tapioca mixture, continuing to stir until the mixture begins to thicken.

Once it starts to thicken, remove the sauce pan from the heat immediately and whisk in the juice and the salt. Transfer the mixture to a heat-proof bowl and allow it to cool to room temperature before you refrigerate it to chill.

Process it in your ice-cream machine according to the manufacturer’s instructions. Then place the churned ice cream in an air-tight container and freeze.

Super-Green Mint Chip Avo-Fro-Yoice cream 2

 

2 cups plain Greek yogurt or non-dairy yogurt

½ cup milk or non-dairy milk of choice

½ teaspoon pure vanilla extract

3 drops pure peppermint extract

1 large, ripe avocado

¼ cup frozen spinach

1/8 teaspoon salt

3 pinches pure stevia extract

Optional: chocolate chips or cacao nibs

 

Scrape out the flesh of the avocado into a food processor. Combine all of the other ingredients (except the chocolate chips) into the processor and blend until completely smooth and without lumps.

Next, process it in your ice-cream machine according to the manufacturer’s instructions. Sprinkle in the chocolate chips as the machine is churning. Then place the churned ice cream in an air-tight container and freeze.

Refreshing Strawberry Watermelon Sorbet

 

2 cups cubed watermelon, frozen (seeds and skin removed)

2 cups strawberries, green tops removed and frozen

Pinch stevia extract

Fresh mint leaves for garnish.

 

Thaw the watermelon cubes for a few minutes, to make it easier to blend. Then toss the watermelon, strawberries and stevia in a powerful food processor and blend until you achieve an airy sorbet consistency. Serve garnished with mint leaves.
